Being part of the Primosale Range – meaning the First Salt, is a young Pecorino. Matured for about 3 to 5 days creating a beautiful palette of sweetness yet not losing the character of a Pecorino. Since 1960 Casearia Ferraro have been producing incredible cheeses from Castelvetrano. Sourcing the best Sheep’s milk from local farms. Every day about 30 local farms give the dairy milk that is constantly analysed.
